blackberry cobbler

 

   

Another unusual luxury dessert from a humble fruit. A hot dish for cool Autumn evenings.

As usual, the main ingredients can be produced on the smallholding with the balance coming from the store cupboard.




Served with cream, either whipped or pouring,

from a Jersey, naturally, if you can.

 

 FILLING:

1 lb Blackberries

1/2 oz Butter
1 teaspoon Lemon Juice

BATTER CRUST:

4 ounces Plain Flour
1/2 level teaspoon Salt
2 level teaspoons Baking Powder
1 Egg (all)
2 oz Caster Sugar
4 tablespoons Milk
2oz melted Butter

 

 

Use a one and a half pound pie dish to mix the blackberries, lemon juice and caster sugar.  Dot with small pats of butter. Put to one side.

Sift the flour, baking powder and sugar into a bowl. Put to one side.

Crack the egg into a basin, add the sugar and beat the mixture well. Stir in the melted butter and the milk. Then gradually stir in the contents of the bowl - the flour mixture, continuously beating to ensure a smooth batter.

Pour the batter over the blackberries in the pie dish.

Bake in the oven at 180 deg C, 350 deg F or Gas Mark 4 for about 30 minutes.
