elderberry tart

 

       

This recipe is very much a favourite for posh dinner parties. A humble fruit yielding an unusual luxury dessert.

As usual almost all the ingredients can be produced on the small-holding.




Served with cream either whipped or pouring,

from a Jersey, naturally, if you can.

 

 FILLING:

Elderberry syrup
3
ounces ground Hazelnuts or ground Almonds

SHORT CRUST PASTRY:

9 ounces Plain Flour
4 and a half ounces Butter 
1 Egg (all)
A pinch of Salt
Water to mix

GLAZE:

1 Egg Yolk


(the white can go into the fridge for a fruit meringue tomorrow)

 

 

 Grease an 8 - 9" diameter round flan dish and line with half the short crust pastry. Thoroughly prick the base with a fork.

 Cover the base of the pastry with the ground nuts. Add the elderberry syrup.

 Roll out the remaining pastry and cover the tart. Seal the edges and brush over the top with egg yolk 

 Bake in the oven at 180 deg C, 350 deg F or Gas Mark 4 for about 50 minutes.
